Carlin pea & spinach topped naan bread

VEGETARIAN

“Delicious and easy to whip up in a few minutes. Great for lunch or a quick post exercise meal. Drizzle with a little chilli oil and get stuck in.”

SERVES: 2   PREP TIME: 2 MINS   COOKING TIME: 5 MINS

Ingredients

1 pot of carlin peas with perks

2 naan bread

2 handfuls baby spinach

1 tblsp plain yoghurt

Chilli flakes

1 sprig mint, chopped

Method

  1. Heat the carlin peas with perks as per instructions on the pot. Stir in the baby spinach to wilt.
  2. Heat the naan bread as instructed.
  3. Spread the carlin peas with perks and spinach on the top of the two naan breads.
  4. Drizzle with the yoghurt, spinkle with chilli flakes and chopped mint. Drizzle with chilli oil if desired.
